EASY BLUEBERRY BREAD

I bought more blueberries than I could eat so I searched to Pinterest for an easy blueberry bread recipe!

If you are a friend at Everyday Edits you know most of my recipes go sideways before I turn on the oven. I miss a line or bake it just a wee bit too much. So imagine my surprise when I made a yummy blueberry bread perfect for a lazy morning or a long commute.

This blueberry breakfast recipe did not disappoint. Sometimes the recipes on social media are missing key details and I don’t realize it until I am past the point of a recipe pivot.

BLUEBERRIES IN A CERAMIC BERRY BASKET

BLUEBERRY BREAD INGREDIENTS

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1/4 vegetable oil
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 1/2 cups blueberries
  • 1 TBSP sugar

INSTRUCTIONS

  1. Preheat oven to 350
  2. Grease loaf pan
  3. mix flour, sugar, baking powder, and salt in a large bowl
  4. Stir milk, oil, egg and vanilla into the flour mixture. Blend
  5. Combine blueberries with 1 tsp of flour and sprinkle 1 TBSP of sugar
  6. Bake in preheated oven for 50-60 minutes
  7. My oven trends hot so I start watching at 45 minutes.
  8. Transfer to a plate to cool.

NOTES

If you are a regular at Everyday Edits you know I have more mishaps than wins in the kitchen. This blueberry bread was so easy and tasted just right- not too sweet.

This homemade blueberry bread would make an unexpected treat for a neighbor. I ate it before I could freeze it. I might double the batch and freeze a loaf for a long weekend.
