Super Easy Blueberry Breakfast Muffins

While cleaning out these kitchen cabinets I found thisBlueberry Breakfast Muffin recipe on the Kroger Old Fashioned Oats cylinder-shaped box. It is like a treasure hunt of goodies when you clean out the pantry!

Do you ever use the recipes on the back of a food item?

It is the perfect recipe when you have a tray of Costco-size blueberries. There are only so many blueberries I can eat before I crave carbs.

BLUEBERRY MUFFINS

I made these blueberry muffins on a blustery Saturday morning. The ingredients are most likely in your fridge and pantry. Fresh or frozen blueberries are a must!

Sidenote: I love these berries baskets! I line them with a paper towel and store all my small produce in the refrigerator.

These blueberry muffins have the taste and texture of scones. They are not as sweet as pumpkin bread or a muffin box mix.

The oats add a little heft to the muffins, similar to scones. Below is the recipe for the Blueberry Breakfast muffins. I stored them in a ziplock bag at room temperature. They were devoured over the weekend.

BLUEBERRY MUFFIN INGREDIENTS

The ingredients are listed for the muffin ingredients and the ingredients for the Streusel topping.

Muffins- Wet & Dry Ingredients

  • 1 CUP OATS
  • 1 1/4 CUP FLOUR
  • 3/4 CUP SUGAR
  • 1 CUP MILK
  • 1/4 CUP UNSALTED BUTTER, MELTED
  • 2 EGGS
  • 2 TBSP MAPLE SYRUP
  • 1 TSP VANILLA EXTRACT
  • 1 CUP FRESH BLUEBERRIES
  • 1 TSP. BAKING POWDER
  • 1 TSP BAKING SODA
  • 1/2 TSP SALT
  • 1 TSP CINNAMON

BROWN SUGAR STREUSEL TOPPING

  • 1/2 CUP BROWN SUGAR
  • 1/4 CUP FLOUR
  • 1/4 CUP OATS
  • 1/4 CUP UNSALTED BUTTER, CHILLED & CUT INTO PIECES
  • 1 TSP VANILLA
  • 1/4 TSP SALT

DIRECTIONS

  1. PREHEAT OVEN TO 400
  2. PREP MUFFIN PAN WITH LINERS OR COOKING SPRAY
  3. IN A MEDIUM COMBINE OATS, FLOUR, SUGAR, BAKING POWDER, BAKING SODA, SALT, AND CINNAMON. SET ASIDE
  4. IN A LARGE MIXING BOWL COMBINE MILK, BUTTER, EGGS, MAPLE SYRUP, AND VANILLA
  5. ADD OAT AND FLOUR MIXTURE TO WET INGREDIENTS. ONCE COMBINED ADD BLUEBERRIES
  6. IN A SEPARATE BOWL MIX STREUSEL TOPPING. ADD BROWN SUGAR, FLOUR OATS, CHILLED BUTTER, VANILLA, AND SALT.
  7. SPOON MUFFIN MIXTURE INTO MUFFIN TRAY AND FILL 2/3 FULL. TOP 2 TBSP OF BROWN SUGAR TOPPING.
  8. BAKE AT 400 DEGREES FOR 20-25 MINUTES.
