MAKE YOUR OWN CRUMBLED COOKIES
Sugar cookies are a staple at our house during the holidays. But sometimes I get a craving for a sugar cookie with almond-flavored icing on a Tuesday in June.
I try to push the craving into the next month, but who wants to turn on the oven in July?
. This sugar cookie recipe features baking staples, including 2 tablespoons of sour cream and almond extract for the icing.
In an attempt to halve the recipe, I encountered a math problem: converting 2/3 cup into tablespoons.
So I did what I did on the ACT and took a guess!
I wish I had found this baking measurement cheat sheet, but then I would not have made these bite-sized crumbled cookies .

It worked because these cookies tasted amazing.
The taste was not the issue.
In this week’s episode of Baking Blunders with Laura, I let the cookies “cool” a little too long on the baking sheet, making them a wee bit crumbly.
As a result, my attempt to cut them into rectangle-shaped sugar cookiesand to decorate them with red, blue, and white almond-tinted icing.
My vision was to create a flag from rectangular sugar cookies with red, white, and blue-tinted icing.
After trimming the edges, my rectangular sugar cookie bars looked more like poker chips than the American flag.
I almost tossed them, but one taste of the sugar cookie and icing, and I decided they were too yummy to toss.

SUGAR COOKIE RECIPE

INGREDIENTS
- 2 1/2 cups flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 stick butter, softened
- 1 cup sugar
- 1 egg
- 2 tbsp. sour cream
- 1 tsp. vanilla
INSTRUCTIONS
- Preheat oven to 350 degrees.
- Line a baking sheet with foil (for thicker bars, use a smaller baking sheet).
- In a large bowl, sift flour, baking powder & salt in a separate bowl
- Cream butter and sugar for about 3 minutes. Add egg, sour cream, and vanilla
- Slowly add the flour mixture. Press the dough onto the baking sheet, and bake for about 14 minutes until edges are lightly golden
- ICING INGREDIENTS
- 1/2 cup unsalted butter, softened
- 4 cups confectioners’ sugar
- 1/4 cup half-and-half or whole milk
- 1 tsp. vanilla1/2 tsp. almond extract
- Sprinkles etc.
BAKE
Press the dough onto the baking sheet, and bake for 14-17 minutes until the edges are lightly golden.
Once cookie bars are cool, decorate these cute cookies!
