HOW TO MAKE OVEN-ROASTED ASPARAGUS

How do you feel about New Year’s resolutions? I usually don’t make any (officially). But over the last few months, I set tiny goals and added vegetables to our empty nest table. When I stumbled on asparagus stems next to the Brussels sprouts I decided I needed to add this vegetable to my veggie rotation. This oven-roasted asparagus recipe was easy enough for me!

OVEN-ROASTED ASPARAGUS RECIPE

Oh, and it’s so easy! I know right? I always looked at asparagus as the fancy vegetable that came as a side at restaurants with carpet and upholstered dining chairs.

This recipe is easy you likely won’t need a recipe. Of course, I just screwed up a two-ingredient recipe. But here you go just in case you cook like me.

STEPS

  • Preheat oven to 425
  • Spray the baking sheet with cooking spray or drizzle with olive oil
  • Rinse the asparagus stems. I know this is obvious, but cooks like me need the obvious stated.
  • Cut off about an inch off the ends of the stems
  • Drizzle asparagus with olive oil
  • Season with salt and pepper.
  • Bake at 425 for 12- 15 minutes until tender.
