BUFFALO CHICKEN MEATBALLS

Ingredients
  

  • 1/4 CUP BUTTER SOFTENED
  • 1/2 CUP HOT SAUCE
  • 1 POUND GROUND CHICKEN
  • 1/2 SMALL ONION FINELY DICED
  • 1-1 1 /2 CUPS BREADCRUMBS
  • 2 STALKS CELERY FINELY DICED
  • 1 LARGE EGG
  • 1 TSP. KOSHER SALT
  • 1/2 TSP. GARLIC POWDER
  • 1/2 CUP YOGURT
  • 1/4 CUP GREEK YOGURT
  • 1/2 CUP CRUMBLED BLUE CHEESE
  • PARSLEY CHOPPED

Instructions
 

  • PREHEAT OVEN TO 400
    MELT BUTTER AND HOT SAUCE IN MICROWAVE. LET COOL.
    STIR: GROUND CHICKEN, BREAD CRUMBS, ONION, CELERY, EGG, SALT, GARLIC POWDER + 1/2 HOT SAUCE/BUTTER MIXTURE
    SHAPE CHICKEN MIXTURE INTO 25-30 MEATBALLS. PLACE ON PARCHMENT PAPER LINED BAKING SHEET. BAKE 15-18 MINUTES .
    ROTATE PAN 1/2 WAY THROUGH COOKING TIME.
    INCREASE OVEN TEMP TO BROIL FOR 3-ISH MINUTES.I PREFER GOLDEN TO CRISPY.
    REMOVE FROM OVEN. TOSS WITH REMAINING BUTTER/HOT SAUCE.
    OPTIONAL: MIX GREEK YOGURT AND BLUE CHEESE CRUMBLES.
    SERVE WITH MEATBALLS AND SPRINKLE WITH PARSLEY.
