SPINACH BALLS BY SIRI DALY

GREAT LIGHT DINNER OR EASY APPETIZER

Ingredients

  • 2 10 oz packages frozen, chopped, spinach, thawed, drained & drained of moisture
  • 2 cups Italian-seasoned breadcrumbs
  • 1 yellon onion diced
  • 3/4 cup unsalted butter, softened
  • 1/2 cup grated Parmesan
  • 1 tsp. kosher salt
  • 1/2 tsp. ground pepper
  • 4 eggs

Instructions

  • Preheat oven to 350. 
    Stir together the spinach, breadcrumbs, onion, butter, Parmesan, salt, pepper and eggs in a large bowl. 
    Using a tablespoon roll the mixture into 48 balls and place on greased baking sheet.
    Bake until edges are golden, about 30 minutes, rotating the baking sheet halfway through cooking
