I LOVE BAB’S CHOCOLATE CAKE

I did something I had never done. No, not that!

I made half a chocolate cake.

I know right?

And in a word problem kind of way, the half-size cake lasted longer than a full-size sheet cake.

It tasted amazing and the half-size cake made me think…

why didn’t do this sooner?

How many times do you make a cake and you either eat the entire thing over five days or toss it into the garbage and pour the morning’s coffee on top?

some of you are nodding your heads and some of you are shaking your head over that last sentence.

CHOCOLATE CAKE SERVED IN RAMEKINS

BAB’S CHOCOLATE CAKE (HALF SHEET_

But Sunday afternoon was one of those days where I wanted, no needed chocolate cake. I found this easy, yummy chocolate cake recipe. Bab’s cookbook was featured in my favorite cookbooks to gift.

And I made half of a chocolate cake which means 1/2 the guilt and calories.

The chocolate frosting should have its own recipe feature. It was created in a small saucepan with four ingredients.

The hardest part of this cake was the square dismount onto an oversized round cake plate. Which is why I ended up serving the cake in Ramekins.

Here is Bab’s chocolate cake recipe but the ingredients and the baking time are cut in half.

In full discosure I did not add coffee to the cake. I did add the boiling water. Hey, my life is in my blog title. I like the option for edits.

INGREDIENTS

1 CUP FLOUR

1 CUP SUGAR

2 TBSP COCOA POWER

1 tsp BAKING SODA

3/4 TSP BAKING POWDER

1/2 TSP SALT

1/2 CUP WHOLE MILK

1/4 CUP VEGETABLE OIL

1 EGG

1 tsp VANILLA EXTRACT

1/2 CUP BOILING WATER

FROSTING

1/2 CUP SEMI-SWEET CHOCOLATE CHIPS

1/4 CUP HALF AND HALF

1/2 CUP BUTTER

1 + 1/ 4CUP POWDERED SUGAR

1/2 TSP VANILLA

DIRECTIONS

  1. Preheat oven to 350
  2. Spray or grease a square baking pan
  3. Add to the mixer bowl: flour, sugar, cocoa powder, baking & baking powder & salt.
  4. Add: egg, milk, oil, and vanilla to the dry ingredients in the mixing bowl
  5. Add 1/2 cup boiling water to cake mixture
  6. Give it one more twirl around the bowl, scraping the bowl to get that sugar, butter, and cocoa mixed in real good.
  7. Pour into a greased square baking pan.
  8. Bake for 15 minutes (remember this is a 1/2 of cake.

FROSTING

I love frosting and this one is easy and so yummy.

In a small saucepan, on low heat add the Semi-Sweet chocolate chips, half and half, and butter until smooth. Set frosting aside to invert the cake onto a cooling rack.

THE CAKE PLATE

The hardest part of this recipe is nailing the dismount of the square cake on a cake plate or charger. With a bronze medal landing, I served the chocolate cake in Ramekins for a pretty and controlled serving size. Please pin for others to find this yummy chocolate cake!
