YOU WILL LOVE THESE FROSTED SUGAR COOKIE BARS

There is a man in my life; I stalk him weekly and I always leave him messages. He is a lifestyle blogger. I pretty much pin every single thing he publishes. I could not wait to make these frosted sugar cookie bars he shared on his blog shared below (like 4 scrolls down).

Believe me it was intentional because once you check out his blog you may never leave.

FROSTED SUGAR COOKIE BARS

The ingredient list was short and the bake time was under 20 minutes. And, no cookie cutters are needed for these sugar cookie bars.

Until I made this recipe, it never occurred to me that I could bake sugar cookies without cookie cutters.

Yep, the only thing you need for these sugar cookie bars is a sheet pan. I decided to use two smaller baking sheets so I could adjust the thickness of the cookie dough on the second pan.

The second baking sheet was covered with about 1/2 of the cookie dough.

I like my sugar cookies (and bars) thick. Kind of like my middle after inhaling a pan of these frosted cookies.

Michael, my blogger crush, created a beautiful ombre frosting technique. It was an epic fail on my end of the country. 

Frosting Fiasco 

When my ombre-tinted frosted started with a Pepto Bismol shade of pink it was impossible to take it down to a blush. Attempts to add more neutral frosting just made it a lighter shade of Pepto Bismol. 

So I put the Pepto Bismol tinted frosting and the two additional shades of pink aide and started over. I used a smidge of pink tint to create a shade of blush for my frosted sugar cookie bars. The lesson: I made an edit and saved the frosting. #everydayedits

FROSTED SUGAR COOKIE BARS

Ingredients
  

  • 2 1/2 cups flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 stick butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 tbsp. sour cream
  • 1 tsp. vanilla

Instructions
 

  • Preheat oven to 375 degrees.Line baking sheet with foil (for thicker bar use a smaller baking sheet). 
    In a large bowl: sift flour, baking powder & salt.
    In separate bowl cream butter, sugar for about 3 minutes. 
    Add egg, sour cream and vanilla
    Slowly add the flour mixture
    Press the dough onto the baking sheet, bake for about 14 minutes until edges are lightly golden.
    Frosting 
    1/2 cup unsalted butter, softened
    4 cups confectioners sugar
    1/4 cup half and half or whole milk
    1 tsp. vanilla
    1/2 tsp. almond extract
    Food Coloring & sprinkles
    Once cookie bars are cool spread the frosting on the cookie bar.Frost as desired the flour mixture
    Press the dough onto the baking sheet, bake for 14-17 minutes until edges are lightly golden.FrostingOnce cookie bars are cool spread the frosting on the cookie bar.Frost as desired

CINNAMON + PECAN ROLLS

These are not the pecan rolls to make if you are in a hurry. These cinnamon pecan rolls are meant to be enjoyed over a mug of coffee and Pinterest. The best part of a holiday or long weekend is the opportunity to linger over breakfast. These Rhodes cinnamon pecan breakfast rolls are the morning treat to kick off a long weekend.

Years ago, when we lived in the suburbs outside of Columbus, one of my best friend’s moms shared this cinnamon pecan breakfast rolls recipe.

It has been a favorite at our house for almost twenty years.

These pecan rolls make an appearance every Christmas morning and Thanksgiving weekend.

These overnight cinnamon pecan breakfast rolls need just six ingredients and 1/2 of those ingredients are baking staples. I keep a bag of Rhodes rolls in my freezer before the holiday rush.

This recipe should start with a warning. These breakfast pecan rolls are addictive. It is nearly impossible to eat just one.

NOTE RECIPE DETAILS

These are make-ahead rolls. I usually make them after Christmas Eve Mass. Layer a pan (I use this Made in USA bundt pan) with melted butter, cinnamon and a package of Butterscotch pudding.

And, the best part is the bottom of the bundt pan where the cinnamon, pecans and butter pool after 25 minutes of baking. Yummy! Just grab a spoon and scoop up the gooey goodness. The Rhodes dinner rolls act like a doughy sponge to grab the melted brown sugar and pecans.

The kids or grandkids could make these with you for a relaxing night in the kitchen. Because for this recipe, I keep a bag of Rhodes frozen dinner rolls in my garage fridge… just in case. And, a box of butterscotch pudding!

OVERNIGHT CINNAMON & PECAN BREAKFAST ROLLS

My favorite breakfast rolls for the holiday and long weekends.

  • 1 pound Rhodes frozen dinner rolls
  • 1 box butterscotch pudding (not low fat or instant) I use larger box
  • 1 cup pecans, chopped
  • 1/2 stick butter
  • 3/4 cup brown sugar
  • 1 tsp. cinnamon

Instructions
 

  • GREASE PAN OR BUNDT PAN.
    SPRINKLE 3/4 OF DRY PUDDING PACKET AROUND PAN
    ADD 1/2 OF THE PECANS.
    LINE PAN WITH FROZEN DINNER ROLLS
    BRING BUTTER, BROWN SUGAR & CINNAMON TO BOIL
    POUR OVER ROLLS
    SPRINKLE WITH REMAINING PUDDING & PECANS
    COVER PAN WITH CLING WRAP AND PLACE IN OVEN OVERNIGHT (UNHEATED)
    REMOVE PAN IN MORNING & PREHEAT OVEN TO 350. BAKE APPROX. 25 MINUTES
    **LESS BAKING TIME MAKES ROLLS MORE GOOEY!

CHOCOLATE CHIP PEANUT BUTTER BANANA COOKIES

If my sister is reading this post she already knows I did not follow the recipe. With this many ingredients for the chocolate chip peanut butter banana cookies recipe’s title, my sister knows I did not have all of the ingredients. And she would be correct. Because with this recipe from Siri Daly’s family-friendly, cookbook, Siriously Delicious I did not have enough bananas. So I added a little Greek yogurt.

CHOCOLATE CHIP PEANUT BUTTER AND BANANA COOKIES

INGREDIENT DETAILS

For these chocolate chip peanut butter and banana cookies, I had almost all the ingredients for these puffy cookies. And, because I had almost all the ingredients I was not going to let the absence of two bananas stand in the way. I assumed the bananas added flavor and moisture so my only substitution options were Greek (vanilla) yogurt or sour cream. I went with the yogurt.

If you have followed me for a hot minute you know my recipes tend to go sideways.

It was in my fridge.

And, whatever ingredients you add or substitute these cookies are amazing! The boys in the house ate the batch of chocolate chip peanut butter banana cookies before the next morning!

These cookies require 30 minutes to chill in the refrigerator so there is no excuse not to clean up the baking aftermath!

  • 2 RIPE BANANAS I substituted Greek yogurt
  • 1/2 CUP UNSALTED BUTTER, SOFTENED
  • 1/2 CUP CREAMY PEANUT BUTTER
  • 1/2 CUP PACKED DARK BROWN SUGAR **substituted with light
  • 1 TSP. VANILLA EXTRACT
  • 1 LARGE EGG
  • 1/2 CUP SUGAR
  • 1/4 CUP SUGAR
  • 2 CUPS FLOUR
  • 1/2 TSP. BAKING POWDER
  • 1/2 TSP. BAKING SODA
  • 1/4 TSP. KOSHER SALT
  • 1 TSP CINNAMON
  • CUP SEMI-SWEET CHOCOLATE CHIPS *I mixed 1/2 milk & semi-sweet

Instructions
 

  • Mash the bananas in large bowl. Add the butter, peanut butter, brown sugar, vanilla, egg and 1/2 cup of the sugar. Stir to combine. 
    Whisk together the flour, baking powder, baking soda, salt and cinnamon. Add the flour mixture to the banana mixture. Stir to combine. 
    Add chocolate chips. Cover with plastic wrap and chill for 1/2 an hour. 
    Preheat oven to 350. Combine remaining sugar and cinnamon. 
    Drop the chilled dough 2″ apart, on to parchment paper lined baking sheets. Sprinkle with cinnamon sugar.
    Bake about 10 minutes until cookies are golden brown. 
    Cool on a baking rack! These are really good!

Growing up we loved when mom  announced breakfast would be dinner.  It was like Christmas came early when we switched up the menu! I carried on the tradition with my three kids.  There is something so yummy and cozy about pancakes and syrup after the sun sets. My mom went all out with pancakes, bacon , hashbrowns and scrambled eggs. It was the 80’s and before the term nonfat was attached to every possible packaged food item at Kroger.

But today I want to share my favorite breakfast (besides pancakes). This is more than just a breakfast recipe it is a family tradition. I bought a case of eggs at Costco in preparation for the Thanksgiving weekend.  

I make this for breakfast the weekend of Thanksgiving and Christmas morning. It has all the fixins except syrup. It’s an egg and cheese and frozen hashbrown recipe that I can prep the night before the holiday.

I just pour it into a crockpot and it is ready to gove the morning of Thanksgiving or Christmas morning.

INGREDIENTS

The best part ofthis tailgate breakfast casserole recipe is the flexibility with the ingredients and the crockpot. Crockpots are the best time management appliance in the kitchen!

For this breakfast casserole, I  added bacon and salsa to give it a little Colorado kick. Hashbrowns, cheddar cheese, and chopped bacon round out the ingredients in the casserole. I describe this recipe as a breakfast burrito in a crockpot.

CROCKPOT SETTINGS

The only tricky part of this recipe is the settings on your crockpot. Despite, the the multiple heat settings, my crockpot tends towards the high heat setting. It’s like an appliance with hotflashes. 

Tip: Make sure to generously spray a cooking spray to keep the scorching and cleanup to a minimum.

The first time you make this breakfast casserole just keep an eye on it until you get an idea of how quickly your crockpot heats up the egg, hash browns and cheddar mixture.

Just layer the ingredients starting with the hash browns followed by the eggs.

Then, add as many layers as you want to include.

Finish the layers with a cup of milk. The frozen hashbrowns love the milk!

Fold the ingredients occasionally to keep them from cooking unevenly.

My crockpot usually heats this casserole in about 90 minutes or so.

I serve this breakfast casserole in the crockpot, buffet style. I add a stack of  these crockopot bowls. I include sides of bacon, salsa, cheese and fresh green onions. A stack of tortillas turns this into a breakfast burrito.

In Colorado, we love our breakfast burritos. I am looking at you Santiagos! 

Enjoy this reakfast casserole on a long weekend, Thanksgiving weekend or Christmas morning. It also reheats and tastes just as good the morning after! 

Oh, and if you want something sweet here is my favorite make ahead pecan rolls.

PUMPKIN BARS WITH CREAM CHEESE FROSTING

Do you have room on your Pinterest board for one more pumpkin recipe? I Just pin this right now because it is the easiest recipe for pumpkin bars. In fact, these bars with cream cheese frosting may be THE pumpkin recipe for the season. These pumpkin bars are on my dessert board.

I plan to make these the weekend before Thanksgiving when my boys and sister fly in for Thanksgiving.

I don’t know what’s yummier the cake-like pumpkin bars or the creamy cream cheese frosting.

Between you and me I could eat cream cheese frosting straight from the bowl…

with a big spoon.

This recipe reminds me why I love to bake from scratch.

There is something special about fresh ingredients and softened butter.

The pumpkin filling and pumpkin spice make the kitchen smell like a Hallmark movie.

Sidenote: Look at these substitutes you can make with pumpkin.

These dense bars are moist and if you cut them into small enough bars you can justify more than… two or three.

To create a dense bar I used my favorite set of everyday white dishes. I love these inexpensive baking dishes

for sides and desserts.

The pumpkin bars are yummy enough you could skip the cream cheese frosting, but why would you deny yourself the rich layer of frosting on top of these bars?

PUMPKIN CAKE BARS

Ingredients
  

CAKE

  • 15 OZ CANNED PUMPKIN
  • 2 TSP PUMPKIN PIE SPICE
  • 1/2 CUP OIL
  • 1 STICK BUTTER SOFTENED
  • 1/2 CUP BUTTERMILK
  • 1/4 CUP BOILING WATER
  • 3 EGGS
  • 2 TSP BAKING SODA
  • 2 TSP VANILLA
  • 2 CUPS FLOUR
  • 1 3/4 CUP SUGAR
  • DASH SALT

CREAM CHEESE FROSTING

  • 1 BLOCK CREAM CHEESE
  • 1 STICK BUTTER SOFTENED
  • 1 POUND (BOX) POWDERED SUGAR
  • DASH SALT (IF YOU LIKE)
  • 1-2 TBSP HEAVY CREAM

Instructions
 

  • 1. PREHEAT OVEN TO 350. SPRAY BAKING SHEET WITH COOKING SPRAY
    2. MIX PUMPKIN AND PUMPKIN PIE SPICE. ADD OIL AND SOFTENED BUTTER AND BOILING WATER UNTIL MIXED COMPLETELY. SET ASIDE
  • 3. IN BOWL MIX BUTTER MILK, EGGS, BAKING SODA AND VANILLA. SET ASIDE
    4. IN LARGE BOWL COMBINE FLOUR, SUGAR + SALT. . POUR IN THE PUMPKIN MIXTURE AND MIX. ADD THE BUTTERMILK MIXTURE AND MIX WELL.
    5. POUR INTOTHE PAN AND BAKE FOR 20 MINUTES. REMOVE AND COOL.
    6. WHILE CAKE COOLS COMBINE CREAM CHEESE, BUTTER, POWDERED SUGAR, SALT, AND HEAVY CREAM.
    FROST ONCE CAKE IS COMPLETELY COOL.

FALL HARVEST CHEX MIX

This fall harvest Chex Mix is not your mother’s Chex mix

I grew up with the classic Chex Mix with pretzels, cocktail peanuts, the Kroger version of the rice and corn cereal and the Wheat Chex® cereal (because the Wheat did not come in the Kroger brand).

And, lots of Worcestershire sauce, seasoned salt, garlic powder and onion powder because my mom loved the seasonings.

So when I discovered there was a whole world of Chex Mix combos that included chocolate, pumpkin spice  and M&M’s it was like discovering Netflix.

And just like Netflix I binged my way through the weekend with a bowl of Chex Mix filled with candy corn and chocolate M&M’s.

This recipe is the perfect combo of sweet and salty and then add the pumpkin spice! Who knew?

Yes those are Bugles nestled between pretzels and peanuts coated with a brown sugar and pumpkin spice flavored melted butter goodness.

 

Tip: I am going to save you four mintues walking up and down the chip aisle. The Bugles are located near the Pringles. Look up.

The perfect combination of cereal, pretzels and peanuts with M&M's and candy corn.

  • 4 CUPS CHEX RICE CEREAL OR GENERIC
  • 3 CUPS MINI PRETZELS MINI PRETZEL STICKS WOULD WORK
  • 3 CUPS BUGLES NEAR THE PRINGLES
  • 1 CUP DRY ROASTED PEANUTS
  • 1/2 CUP M&M CANDIES
  • 1 CUP HARVEST MIX CANDY CORN

PUMPKIN SPICE COATING

  • 1/2 CUP BUTTER
  • 1/2 CUP BROWN SUGAR
  • 2 TSP. VANILLA
  • 3 TBSP. PUMPKIN SPICE

Instructions
 

  • 1. PREHEAT OVEN TO 275. PREPARE WITH BAKING SHEET FOR EASY CLEANUP. TRUST ME
    2. IN LARGE MIXING BOWL COMBINE THE CEREAL, PRETZELS, BUGLES & PEANUTS
  • 3. IN GLASS BOWL, MICROWAVE BUTTER AND BROWN SUGAR FOR 1 MINUTE (ISH).
  • 4. REMOVE FROM MICROWAVE, STIR IN VANILLA & PUMPKIN SPICE
    5. POUR PUMPKIN SPICE MIX OVER THE CEREAL MIX AND STIR TO COAT
    6. POUR ONTO PREPARED BAKING SHEET & BAKE FOR 30 MINUTES, STIR AFTER 15 MINUTES (IT'S MORE LIKE A GENTLE FOLD BECAUSE THE PAN IS FULL).
    7. REMOVE FROM OVEN AND COOL COMPLETELY. TRUST ME.
    8. TOSS THE M&M'S AND HARVEST MIX CANDY CORN

The most difficult part of this recipe is waiting for the cereal, pretzels, peanuts and Bugles to cool.

This is when the magic happens. Once cooled you toss in the M&M’s and Harvest candy corn mix.

Tip: The seasonal M&M’s went fast at our Kroger. I missed out on the fall theme M&M’s and ended up sorting the browns and oranges for my version of the Harvest M&M mix.

It was a tedious task, but someone had to do it. #snarkasm

 

I usually double this recipe and ship it to my college age boys. It is a great idea for a care package party.

ZUCCHINI RIBBON SALAD

Sharing a seasonal zucchini ribbon salad recipe 

If you like easy recipes you are in the right place.

Regular readers of Everyday Edits you likely stumbled upon one of my recipes. You also know that it’s rare for my recipes to not go off the rails somewhere between “preheat the oven” and “let cool.”

So I was psyched when I made this zucchini ribbon salad without any ingredient mishaps.

Zucchini is in the final stretch for the garden season here in Colorado. My dad dropped off zucchinis which weighed more than my 3rd child at birth.

There is a whole ne world of vegetables that do not originate in a can.

I could not make one more of these cakes. keep baking this cake.

So when I found this recipe in Stanley Tucci’s cookbook (a gift)  and it had only four ingredients it was like Stanley whispered to me, “you got this.”

What I loved about this zucchini salad was the short list of ingredients (salt, pepper and lemon juice).

The hardest part was not having a fancy peeler and grabbing the only peeler I had in my kitchen drawer.

I suggest transferring the zucchini ribbons to a paper towel before plating them to soak up the excess moisture.

Sharing pumpkin and chocolate bars for the perfect fall treat for! 

September is the unofficial kickoff for pumpkin recipes! Last year there was a run on canned pumpkin and my sister-in-law found 1/2 a case at her grocery store. There is no such thing as too many cans of pumpkin in the pantry!

So with cooler mornings, it seemed the perfect time to make these bars filled with pumpkin goodness and chocolate chips.

You can save these pumpkin bars to your dessert, snack or brunch Pinterest boards. They are very flexible for snacking any time of the day. You can start or end your day with these bars (or both).

These bars are pretty much fail-proof and you know what a big promise that is if you have followed my recipes.

The ingredient list has no surprises so you should have most of the ingredients. The only ingredient you may need is a can of pumpkin.

I made one, may two edits to these pumpkin and chocolate bars. I reduced the sugar by 1/4 of a cup because why not?

Well, I missed those four tablespoons of sugar. Don’t skimp on the sugar.

Sidenote: Right about now my sister is banging her head against her tablet because I did not follow the recipe. #snarkysisters

  • SLOWLY ADD DRY INGREDIENTS, STIR IN CHOCOLATE CHIPS
  • SPREAD INTO PAN. BAKE FOR 25-ISH MINUTES DEPENDING ON OVEN SETTINGS. CUT INTO BARS.

That’s it! This pumpkin and chocolate combo is perfect for this time of year. And, you can make these pumpkin dog bones for your four-legged family members.

ORANGE COOKIES WITH ICING

Sharing an easy recipe for orange cookies with a light, orange flavored icing. 

Don’t you love it when you try a new recipe and it tastes better than you imagined? The orange cookies with icing are super yummy. Pin these cookies to this list.  They come out of the oven like little pillows on a cookie sheet. They are surprisingly filling so there is no instinct to grab three when one might do the trick.

I found this recipe from my blog friend, BonBon on her blog.

Orange cookies with icing are the perfect transitional cookie this time of year- when thoughts of baking creep back into my brain as the temperatures drop a smidge.

The icing is really easy and if you are a baker you likely have everything in the pantry. You do need an orange and orange juice for the icing. I used fresh-squeezed orange juice.

The ingredient list was simple which is always a good thing with my track record for messing up recipes.

The finished dough is kinda sticky and dense which gives you a clue to their puffy exterior when they come out of the oven.

  • 1-3 TBSP ORANGE JUICE
  • COMBINE SUGAR, VANILLA, BUTTER AND ORANGE RIND. BLEND IN ORANGE JUICE FOR ICING CONSISTENCY.

ZERO CALORIE HARVEST PUMPKIN ICED TEA

Sharing a zero-calorie harvest pumpkin iced tea for the first days with a chill in the morning or the first sighting of a fall leaf floating to the ground. 

Can you feel it? It’s sticky (and smoky)  here in Colorado, but the nights arrive earlier and a smidge cooler.  But it is hot during the day and I love this zero-calorie harvest pumpkin iced tea for my mid-afternoon caffeine pick me up.

It is the perfect refresher for a hot afternoon. And it is so easy. I found this Celestial Seasonings iced tea at Kroger last fall. It’s the pumpkin latte for iced tea. It is perfect for the dog days of summer and the cooler days of fall.

I usually make a single serving in a larger glass and add a cinnamon twist and orange or lemon depending on what I have in the house. I serve with heaps of ice. And I just ordered these jars.

Sharing 5 tips to lose the love handles without missing your favorite foods

Chloe, our Bernese Mountain dog, lost ten pounds this spring. Our veterinarian is thrilled.

Dr. Vicker likes his patients’ lean and he says the same tricks work for their human family members.

It turns out the way to lose those love handles was what our veterinarian suggested for Chloe.

Eat less.

It sounds so simple when you read those seven letters.

I noticed after the holidays my jeans were snug and my waistline had an extra inch (or two) on both sides. Oh wait, were those love handles?

I worked out regularly but started a few bad habits during our extended staycation.

It was time to end a few bad habits like when I quit this one.

5 TIPS TO LOSE THE LOVE HANDLES

And you know what I rediscovered? A feeling I had not experienced in years. Years!

Hunger pains.

Over the past year, I got into a terrible habit of snacking whenever my tummy grumbled. And my 45 Goldfish for 140 calories turned into a half bag of Goldfish …. every afternoon.

Here’s how I lost a few pounds and tackled that love handles.  And I mean a few. I hate to diet and do not do well with restrictions.

Here’s how I did it.

1.  Start every morning with 20 sips (gulps) of water.

Think about it what is the first thing you drink in the morning? If you say coffee this tip will work well with your early morning routine.

While my coffee percolates I drink 20 sips (gulps) of water. I like my water in a glass and so I don’t love a Nalgene bottle. My daughter uses something like this to get her water in for the day.

2. Stop eating  3 hours before bedtime.

This habit snuck up on me. Last year, I would snack my way through an entire Costco-size bag of popcorn while watching Netflix.

Now, I go to bed hungry which was a feeling I had not felt in years. I make exceptions when we have dinner out with friends or family, but I think this tip is the one that jumpstarted my metabolism

3. One glass of wine.

Nothing goods happen when I pour a 2nd. Again there are exceptions, but one glass of wine forces me to slow down and drink water.

4. Make less look like more

I have the same breakfast most mornings- one egg + one egg white and 2 strips of turkey bacon. When I purchase my turkey bacon the first thing I do is take my kitchen scissors and cut the strips down the center (of the entire package).

Visually I have 2 strips of turkey bacon. And after a few days, you don’t miss that 2nd, 70 calorie strip of bacon.

I did the same thing with my turkey sandwich. I went from a whole sandwich to a half. And, then I did this to it. I added apples and spinach to my sandwich. It’s so good-even my younger son does it with his sandwiches.

5. Add greens to everything

Now if you are a real foodie this may be unconventional, but I add spinach leaves to many meals. I add spinach to my sandwiches, I layer my plate or bowl with spinach when we have pasta or nibble on spinach leaves as I prep for dinner.

6. Serving Size Chocolate

In my kitchen, I have a drawer dedicate for my sweet tooth. The second I cut out chocolate (or give it up at Lent) I will binge my way through a bag of M&M’s (full size).  . And over the course of the year, I grabbed larger handfuls. Now I pay attention to the serving size and deduct a few M&M’s or my favorite cocoa dusted almonds from that serving size.

I am not a fan of scales. I get weighed at my annual exam and I weigh myself in January.

But there is a little accountability so I do weigh myself on Tuesdays until my habits stuck like a Simone Biles landing.

Now I can’t even imagine not starting my day without 16 oz of water.

CHOCOLATE OATMEAL PEANUT BUTTER BARS

I thought I had baked every possible combo of chocolate, oatmeal and peanut butter.  It turned out I was wrong.

Even my son asked about this recipe. He said there was something different about these chocolate, oatmeal, and peanut butter bars.

The secret to these chocolate oatmeal peanut butter is the can of sweetened condensed milk!

The secret to these bars was the sweetened condensed milk. It made these so much more than just peanut butter, oats and chocolate.

It does something when the peanut butter and condensed milk blend together. It’s like a dessert tango.

Usually, sweetened condensed milk only comes out of the pantry in December. It’s a staple for the holidays.

So enjoy this easy maybe seven ingredient recipe. I don’t count the staples like baking soda and vanilla.

I made this recipe two weeks ago and set aside a plate, wrapped in cling wrap, which bloggers know is the universal sign that the contents of the plate need to be photographed.

Well, my son thought it was set aside for him so he essentially ate my blog post photos.

Reluctantly, I made another batch of these bars. It did not disappoint the second time which if you follow my recipes on Everyday Edits you know my recipes tend to go off the rails.

But every dessert bar looks better when served in my favorite white dishware. I have these in almost every size. My kids gave them to me for Christmas (I had to take a photo of the aisle in advance). #wink

RECIPE 

CHOCOLATE CHIP OATMEAL PEANUT BUTTER BARS

Recipe adapted from Crazy for Crust
The secret to these bars is the can of sweetened condensed milk.

CRUST AND TOPPING

    • 2/14 CUPS QUICK OR OLD FASHIONED OATS I PREFER OLD FASHIONED
    • 1 1/4 CUPS PACKED BROWN SUGAR
    • 1 CUP FLOUR
    • 1/2 TSP BAKING SODA
    • 1 CUP BUTTER SOFTENED

    FILLING (THE GOOD STUFF IN THE MIDDLE)

    • 1 14 OZ CAN SWEETENED CONDENSED MILK
    • 1/4 CUP CREAMY PEANUT BUTTER
    • 1/2 TSP VANILLA
    • 1 PACKAGE CHOCOLATE CHIPS I USED MIX OF MILK + SEMI-SWEET

    Instructions
     

    • 1. PREHEAT OVEN TO 350.
      2. LINE 9X13 BAKING DISH W / FOIL + SPRAY W/ COOKING SPRAY
      3. COMBINE CRUST + TOPPING INGREDIENTS IN LARGE BOWL.
      4. MIX WITH MIXER UNTIL CRUMBLY.
      5. RESERVE 2 CUPS OF THE CRUMBLY MIXTURE + PRESS REST IN BAKING DISH
      6. MIX SWEETENED CONDENSED MILK, PEANUT BUTTER + VANILLA IN BOWL.
      7. POUR + SPREAD EVENLY OVER THE CRUST
      8. ADD CHOCOLATE CHIPS (I USE COMBO OF MILK AND SEMI-SWEET) + ADD THE RESERVED CRUST AS TOPPING OVER CHOCOLATE CHIPS
      9. BAKE FOR 25-30 MINUTES UNTIL LIGHTLY BROWN AROUND THE EDGES.
      10. COOL COMPLETELY BEFORE CUTTING INTO BARS.

    STRAWBERRY YOGURT BARS

    STRAWBERRY YOGURT BARS

    Strawberries are in season and taste amazing. I grabbed containers of strawberries and started my search for an easy strawberry dessert. I landed on a Strawberry Greek yogurt dessert that sounded perfect for the hot days in July and August.

    Don’t these strawberries look amazing! I use these ceramic crates to store fresh fruits and veggies.

    STRAWBERRY GREEK YOGURT BARS

    I went totally out of my comfort zone with these strawberry yogurt bars. In full disclosure, I do not love Greek yogurt. It is an acquired taste. But, I love to pair strawberries with the tangy so I thought, why not?

    It is a challenge- like me following a recipe. I keep tabs on my recipes here.

    Speaking of recipes the ingredient list is simple, but there are multiple steps to follow.

    These dessert bars start with a graham cracker and butter crust. Seriously, I could eat the crust with a spoon.

    Then there is the cheesecake base made with a combo of cream cheese Greek yogurt. And, you know what?

    I liked it. It tasted lighter and my stomach was not rebelling against two blocks of cream cheese.

    What tripped me up on this recipe is that from start to finish these bars were baked three times. Yep from the crust to the strawberry puree, I popped these bars in the oven three times. At times I thought I misread the recipe and screwed it up.

    CRUST

    • 6 GRAHAM CRACKERS, CRUSHED OR 3/4-1 CUP GRAHAM CRACKER CRUMBS
    • 3 TBSP MELTED BUTTER I USED 3-4 TBS BUTTER BECAUSE I WANTED DENSE BASE

    CHEESECAKE BAR BASE

      • 6 OZ CREAM CHEESE I USED THE ENTIRE BLOCK
      • 1 CUP PLAIN OR GREEK YOGURT
      • 1/3 CUP SUGAR
      • 1 EGG
      • 1 EGG WHITE
      • 1 1/2 TSP. VANILLA
      • 2 TBSP FLOUR
      • 1 PINCH OF SALT

      STRAWBERRY TOPPING

      • 8 STRAWBERRIES HULLED
      • 2 TBSP SUGAR OPTIONAL DEPENDING ON SWEETNESS OF STRAWBERRIES
      • 1 CUP PLAIN YOGURT GREEK, PLAIN, NONFAT, ETC.
      • 1/2 TSP VANILLA

      Instructions
       

      • PREHEAT OVEN TO 350
      • LINE AN 8X8 BAKING SHEET WITH PARCHMENT PAPER +SPRAY WITH COOKING SPRAY
      • PROCESS GRAHAM CRACKERS WITH FOOD PROCESSOR IF USING WHOLE CRACKERS. ADD MELTED BUTTER. PROCESS AGAIN TO MIX.
      • FOLD MIXTURE INTO BAKING DISH AND PRESS FIRMLY WITH HANDS OR SPATULA. BAK 5-7 MINUTES. REMOVE AND SET TO COOL

      CHEESECAKE LAYER/FILLING

      • CLEAN FOOD PROCESSOR AND ADD CREAM CHEESE, YOGURT, SUGAR, VANILLA, + SALT. PROCESS UNTIL SMOOTH. ADD EGG +EGG WHITE. ADD FLOUR AND PROCESS.
      • POUR CHEESECAKE MIXTURE OVER THE COOLED CRUST + BAKE 25-30 MINUTES UNTIL SET IN MIDDLE (IT MIGHT JIGGLE A SMIDGE).

      STRAWBERRY TOPPING

      • REMOVE CHEESECAKE FROM THE OVEN+ POUR STRAWBERRY TOPPING OVER THE CHEESECAKE. IT SHOULD POOL OVER THE CHEESECAKE BASE. RETURN TO OVEN AND BAKE ABOUT 15-20 MINUTES.
      • TRANSFER THE BAKING DISH TO WIRE RACK TO COOL. THEN PUT BARS IN FRIDGE TO CHILL +SET OVERNIGHT.
      • CUT INTO 12 BARS (I CUT MINE IN HALF) AND ADD STRAWBERRY SLICE IF YOU LIKE.
      • ** MY BASE LOOKED LIKE PEPTO BISMOL + I THINK IT'S BECAUSE I ADDED MORE STRAWBERRIES TO THE TOPPING.

      Here is a fun twist on the graham cracker crust. Hint: it’s made with pretzels.

      SUPER EASY BUFFALO CHICKEN MEATBALLS

      Sharing a super easy buffalo chicken meatballs recipe that is a year-round favorite at my house. 

      These buffalo chicken meatballs are a hit at our house. This is huge news because my cooking skills are more misses than hits with me in the kitchen.

      SUPER EASY BUFFALO CHICKEN MEATBALLS

      My favorite part about this recipe is it is pretty much fail-proof. If you are a regular here at Everyday Edits you know my track record for following a recipe is not so good. So that’s why these buffalo chicken meatballs are extra amazing!

      Even I can make these chicken meatballs. The ingredient list is nothing fancy or messy. Well unless you microwave the butter and hot sauce for more than a minute! Oops!

      I found this recipe in my favorite cookbook of all time. I have shared several of her recipes like this one.

      The protein-packed meatballs are an easy dinner for busy schedules and make yummy leftovers!

      I have substituted chicken with ground turkey. My sister has substituted a vegan meatless crumble for this recipe.

      Either way, there is plenty of protein in these buffalo-flavored chicken meatballs.

      Tip: Brush the butter/hot sauce. I drizzled instead of brushing and some of the meatballs missed out on the yummy sauce.

      Oh and if you have a crowd of teenagers just go ahead and double the recipe.

      I left out the celery because one of my boys (and Evan) is not a fan of cooked celery. But, he grew up eating peanut butter on celery sticks so maybe he will try it as a college student!

        SHAPE CHICKEN MIXTURE INTO 25-30 MEATBALLS. PLACE ON PARCHMENT PAPER LINED BAKING SHEET. BAKE 15-18 MINUTES .
        ROTATE PAN 1/2 WAY THROUGH COOKING TIME.
        INCREASE OVEN TEMP TO BROIL FOR 3-ISH MINUTES.I PREFER GOLDEN TO CRISPY.
        REMOVE FROM OVEN. TOSS WITH REMAINING BUTTER/HOT SAUCE.
        OPTIONAL: MIX GREEK YOGURT AND BLUE CHEESE CRUMBLES.
        SERVE WITH MEATBALLS AND SPRINKLE WITH PARSLEY.
