Some people think of leaves as the welcome signal for autumn. For me, it is seeing cases of Libby canned pumpkin on an endcap at Kroger. And that was what happened last week when I ran into the store for my Kroger brand of vanilla caramel creamer. Along with canned pumpkin, there were the familiar nutmeg, cloves and allspice. Fall showed up in aisle four.
With cooler mornings it was the perfect time to make these bars filled with pumpkin goodness and chocolate chips. These bars are the perfect density with the chocolate chip and pumpkin combo.
These bars are pretty much fail-proof and you know what a big promise that is if you have followed my recipes.
PUMPKIN AND CHOCOLATE BARS
The ingredient list has no surprises so you should have most of the ingredients. The only ingredient you may need is a can of pumpkin. Check the endcaps next to the baking aisle.

PUMPKIN AND CHOCOLATE BARS RECIPE
- 2 CUPS FLOUR
- 1 1 /2 TSP CINNAMON
- 3/4 TSP GINGER
- 1/2 TSP NUTMEG
- 1/8 TSP. ALLSPICE
- 1/8 TSP CLOVES
- 1 TSP BAKING SODA
- 3/4 TSP. KOSHER SALT
- 2 STICKS BUTTER, SOFTENED
- 1 1/4 CUP SUGAR
- 1 EGG, ROOM TEMP
- 2 TEASPOONS VANILLA
- 1 CUP CANNED PUMPKIN
- 1 1/2 CUPS SEMISWEET OR MILK CHOCOLATE CHIPS (OR A COMBO)
PREHEAT THE OVEN TO 350. LINE 9X12 BAKING PAN WITH FOIL.
- SPRAY WITH COOKING SPRAY
WHISK DRY INGREDIENTS
CREAM BUTTER, SUGAR ADD EGG AND VANILLA. ADD PUMPKIN
SLOWLY ADD DRY INGREDIENTS, STIR IN CHOCOLATE CHIPS
SPREAD INTO PAN. BAKE FOR 25-ISH MINUTES DEPENDING ON OVEN SETTINGS. CUT INTO BARS.
