EASY MARRY ME CHICKEN RECIPE
The name of this recipe makes me smile. I found this recipe last winter, but I stuck to my go-to dinner recipes like this Mexican Pasta. For context, in our first year of marriage, our freezer was stocked with Chicken by George frozen marinated chicken dinner.
But I loved the name of this recipe, and the ingredient list was manageable. I knew where to find the ingredients listed below.

INGREDIENTS FOR MARRY ME CHICKEN
- 3 Tbsp. extra-virgin olive oil, divided
- 4 (8-oz.) boneless, skinless chicken breasts
- Kosher salt
- Black pepper
- 2 cloves garlic, finely chopped
- 1 Tbsp. fresh thyme leaves
- 1 tsp. crushed red pepper flakes
- 3/4 cup low-sodium chicken broth
- 1/2 cup chopped sun-dried tomatoes
- 1/2 cup heavy cream
- 1/4 cup finely grated Parmesan
- Torn fresh basil, for serving
DIRECTIONS
- Add chicken breasts to the skillet with 3 tablespoons of olive oil. Heat each side for just under 5 minutes. Place the chicken on a plate.
- In the same skillet over medium heat, heat 2 tablespoons of oil.
- Stir in garlic, thyme, and red pepper flakes. Cook, stirring, until fragrant, about 1 minute.
- Stir in broth, tomatoes, cream, and Parmesan; season with salt.

- Bring to a simmer, then return the chicken and any accumulated juices to the skillet.
- Step 3Transfer skillet to oven. Bake chicken until cooked through and juices run clear when chicken is pierced with a knife, 10 to 12 minutes.
- Step 4 Arrange chicken on a platter( I served in a ceramic serving dish).
- Spoon sauce over. Top with fresh basil.


Total aside: Sun-dried tomatoes are a game changer in making a chicken dish taste like it was made in a restaurant.
I thought it was spaghetti sauce in a jar.
